baked blueberry doughnuts


Biting into a still warm, freshly made doughnut is pure joy - especially when they're homemade! They are definitely just one of those feel good foods. Baked doughnuts are an easy, healthier and just as delicious alternative to the regular deep fried ones.


These are perfect to take to gatherings, share with friends or even if you're just feeling a little sweet fix. This recipe makes enough batter for 6 doughnuts and like regular doughnuts these are most delicious on the day they are made!



Begin by preheating the oven to 180 degrees Celsius. For the batter sift the flour and mix all dry ingredients together. Create a well in the middle of the dry ingredients and mix in the wet ingredients. Stir in the blueberries.


Prepare your doughnut moulds by oiling them with some coconut oil. If you have silicone non-stick ones you can skip this step (the moulds I used).


Fill the moulds with the batter, allowing room for them to rise in the oven.

Cook for around 15 minutes or until cooked through and golden brown.



The 'Icing':

You can really ice these babies with anything you like. I'm a huge fan of berries however and think that a berry jam / sauce makes them even more incredible.



Combine all ingredients into a small saucepan and cook over a medium - high heat for around 7 minutes. Once all berries have cooked take off the heat and allow to cool.


Personally I like the look of the seeds, but if you don't like the seeds of the berries you can strain the mixture.


Spoon the icing over the doughnuts, allowing the excess to drip off. Leave as is or decorate with anything you like - I used dried rose petals & edible flowers.




P.s. don't feel bad if you eat them all in one sitting... I may or may not be guilty of it!
