homemade cashew pesto, zucchini noodle, edamame, avo & almond salad

I had forgotten how easy it was to make your own pesto, not to mention how much YUMMIER it is. This dish is probably one of the easiest and now one of my favourite things I've made to date.


Inspired by one of the best brekkies I've had in a long time at @pawpawcafe. This recipe will serve 2 - 3 people (depending on how hungry you are).



The pesto: 


So easy... I use my NutriBullet and just throw all of my ingredients in together and blend. Make sure you don't over blend, it is yummiest with texture in my opinion. 


*tip - make sure you blend all ingredients together at once. If you try blend just some at a time in different batches then it will go a brown colour*


The 'pasta': 


Spiralize your zucchini, and cube your avo. Mix all ingredients together. Add a dash of olive oil if needed, season with salt and pepper.
